What a great mixture of vegetables included here! We endeavoured to combine as much variety as possible into these patties – a meal in themselves!
- Potato - primarily composed of carbohydrates with moderate amounts of protein and fibre, but virtually no fat.
- Carrots - Most of the benefits of carrots can be attributed to their beta-carotene and fibre content. They are also a good source of antioxidants, rich in Vitamins A, C, K and B8, as well as Pantothenic Acid, Folate, Potassium, Iron, Copper and Manganese.
- Broccoli – Known for its beneficial health effects, is sometimes referred to as one of the Super Veges. Broccoli is high in many nutrients, including Fibre, Vitamin C and K, Folate, Manganese, Iron and Potassium. Broccoli also contains more protein than most other vegetables.
- Spinach – another vegetable very high in nutrients. It contains excellent levels of Magnesium, Iron, Vitamins B2, B6, K, E, A., Folate, Calcium, Potassium, Manganese and Copper to name a few. Spinach is therefore rich in anti-inflammatory properties.
- Onions - Onions health benefits are mostly due to their high content of antioxidants and sulfur-containing compounds.
- Garlic - For thousands of years, garlic was believed to have medicinal properties and science has now confirmed this.
