What a great mixture of vegetables included here!  We endeavoured to combine as much variety as possible into these patties – a meal in themselves!

 

  • Potato - primarily composed of carbohydrates with  moderate amounts of protein and fibre, but virtually no fat.
  • Carrots - Most of the benefits of carrots can be attributed to their beta-carotene and fibre content. They are also a good source of antioxidants,  rich in Vitamins A, C, K and B8, as well as Pantothenic Acid, Folate, Potassium, Iron, Copper and Manganese.
  • Broccoli – Known for its beneficial health effects,  is sometimes referred to as one of the Super Veges.  Broccoli is high in many nutrients, including Fibre, Vitamin C and K, Folate, Manganese, Iron and Potassium.  Broccoli also contains more protein than most other vegetables.
  • Spinach – another vegetable very high in nutrients. It contains excellent levels of Magnesium, Iron, Vitamins B2, B6, K, E, A., Folate, Calcium, Potassium, Manganese and Copper to name a few.  Spinach is therefore rich in anti-inflammatory properties.
  • Onions - Onions  health benefits  are mostly due to their high content of antioxidants and sulfur-containing compounds.
  • Garlic - For thousands of years, garlic was believed to have medicinal properties and science has now confirmed this.
    While garlic ranks as an excellent source of Manganese and Vitamins B6, C and Copper, and a good source of Selenium, Phosphorus, Vitamin B1, and Calcium, it is the Sulfur compounds in garlic that serve as its spotlight nutrients in terms of overall health benefits. The Sulfur-containing compounds in this allium vegetable have been shown to provide us with health advantages in a wide variety of body systems, including: our cardiovascular system, immune system, inflammatory system, digestive system, endocrine system, and detoxification system.
  • Ginger – another superfood! - Gingerol is the main bioactive compound in ginger, responsible for much of its medicinal properties. It has powerful anti-inflammatory and antioxidant effects and is loaded with nutrients and bioactive compounds that have powerful benefits for your body and brain.  Ginger has a very long history of use in various forms of traditional/alternative medicine. It has been used to help digestion, reduce nausea and help fight the flu and common cold, to name a few.
  • Quinoa - Quinoa is full of protein, fibre and other fabulous nutrients.  It has all 9 essential amino acids, which makes it a complete vegetable protein.  Quinoa is also a complex carbohydrate meaning that it digests gradually, giving the body time to absorb the nutrients.
